About Mitsumoto Sakari 240/1000/6000 Whetstone
Mitsumoto Sakari 240 / 1000 / 6000 three-side stone
This page is the Mitsumoto Sakari 240/1000/6000 Whetstone — “MITSUMOTO SAKARI 240/1000/6000 Grit Whetstone, 3-Side Sharpener Stone.” Maker: Mitsumoto Sakari. Three grits on one stone: 240 to repair, 1000 to sharpen, 6000 to finish. It is not the 400/1000 plus 3000/8000 two-stone set, not a 10,000-grit agate slip, and not a belt.
SKU KV-114 on the Tools shelf. Finish: Whetstone. Priced in CAD. It does not cut onions; it maintains the knives on the other shelves.
Three sides on one stone is less to store than KnifePlanet’s two-brick set, and a different grit map (240 / 1000 / 6000 versus 400 / 1000 / 3000 / 8000). Mitsumoto Sakari is also a kitchen-knife maker on the Damascus shelf; this SKU is the stone, not the 8.5-inch santoku.
Flatten. Then 1000, then 6000, for a VG-10 chef’s knife that is merely dull. Use 240 when you chipped a tip. Priced in CAD, adults 18+, tracked. Tools shelf at The Knife Vault.
How to use the three faces
Start at 240 only if the edge is chipped or blunt enough that 1000 would take all afternoon. Most kitchen maintenance is 1000 then 6000. Flatten the stone; a dished 1000 face puts a belly in the edge you did not ask for. Soak or splash as this stone requires — follow the insert, do not assume every Japanese stone is a full soak.
- Grits named: 240, 1000, and 6000 on three sides.
- Maker: Mitsumoto Sakari. SKU: KV-114.
- Not a guided rod system, not a Ken Onion belt sharpener.
Limits
A 6000 finish is kitchen-polish, not a 10,000 mirror. Strop after if you want more bite rolled off. Powder steels and M390 will still rather see diamond; this stone is the honest tool for VG-10, 10Cr15CoMoV, and unnamed kitchen stainless. Adults 18+. Knife care guide.
