Chef Knife Steel Comparison: VG-10 vs Powder, Stainless, and Damascus Cladding

A chef knife is judged at the board: onion acid, a damp sponge, a winter squash, and whether you will actually stone it. Pocket-steel bragging rights do not apply. This comparison is the chef-knife job only — VG-10, powder steel, high-carbon stainless, and Damascus cladding as construction around a core.

The kitchen steel guide is the explainer for each alloy on the kitchen shelf. This dossier is the table you screenshot when the listing says “Damascus” and you still need to know what cuts. Shop chef knives when the core is named.

01 Direct answer: which steel for a chef knife?

VG-10 at about 60 HRC is the default named core for a daily chef or gyuto on this shelf: keen, stainless enough for a busy sink, cooperative on a 1000-grit stone. Powder steel at about 63 HRC is the long-interval option if your technique is careful and you will not twist the edge in a bone. High-carbon stainless is the always-sharp workhorse if you hone more than you stone. Damascus is not a steel — it is cladding. Judge the knife by the named core underneath the waves.

02 The comparison table

Edge life is weeks of home prep, not CATRA theatre. Toughness is whether a squash or an accidental bone chips the apex. Corrosion is the wet-sink burden. Sharpening is whether an ordinary water stone is enough. Cladding is listed as a construction row so it is not mistaken for a fourth alloy.

03 VG-10 vs powder vs stainless — the fork at the board

VG-10 is Takefu kitchen stainless: roughly 1% carbon, 15% chromium, plus vanadium, molybdenum, and cobalt. At about 60 HRC it takes a fine push-cutting edge and comes back on aluminum-oxide stones. It is the core inside most Damascus chefs we stock.

Powder steel on this kitchen rail — the Sanmeiho line at 63 HRC — stretches the interval between stones and wants respect at the board. Twist in a squash or scrape glass and you may chip rather than roll. High-carbon stainless (Hoshanho’s kitchen family) refreshes on a ceramic rod in seconds; it is sharp more often than a premium steel whose owner dreads the bench. 440C is the respectable budget named stainless: hardenable, easy to stone, a step behind VG-10 in edge life — not mystery metal.

04 Damascus cladding: construction, not a winner

Modern kitchen Damascus is layers of two alloys forge-welded around a hard core. The waves are the face. The core is the knife. “67 layers” counts cladding, not cutting. A VG-10-core Damascus chef cuts like VG-10 with extra lateral toughness and a textured face that can help food release. A listing that says only “Damascus steel” has not named the part that meets the onion.

Is VG-10 better than powder steel in a chef knife?
Different, not strictly better. VG-10 at about 60 HRC is easier to stone and more forgiving at the board. Powder steel at about 63 HRC holds a fine edge longer and chips more readily. Match the steel to how you cut and how often you will sharpen.
Is Damascus steel better than VG-10?
Damascus cladding is not a competing steel. Kitchen Damascus on this shelf is usually VG-10 (or another named core) wearing pattern-welded faces. The core does the cutting. Pattern without a named core is decoration.
What is the best steel for a chef knife?
A named stainless around 58–61 HRC that you will resharpen. VG-10 at about 60 HRC is the default on our Damascus chef shelf; high-carbon stainless if you hone more than you stone; powder steel if you want months between sessions and careful technique. Anonymous “stainless” is not an answer.
Can I put a VG-10 or Damascus chef in the dishwasher?
No. Heat, caustic detergent, and rattling contact dull the edge and haze cladding. Hand-wash and towel-dry. That is true of any decent chef knife, not a quirk of one alloy.
